This is Quentin’s least favourite spirit to make - it’s the most difficult. Hundreds kilos of berries go into each batch, and they need to infuse for several months. Every time we bottle Ink Sloe & Berry Gin we burn through production filters as the heavy fruit sediment clogs up the system. McLean’s Gin produce a quirky and colourful collection of craft spirits from their purpose-built “Gin Lab”. Every aspect of production is carried out by the careful hand of Head Ginologist; Colin McLean. It was all a giant experiment and the eureka moment came when he discovered that butterfly pea infused gin changed colour from inky blue to pink when mixed with, of all things, tonic water. That flower would go on to become the hero botanical of the gin, and the name of course, was to be Ink Gin.

Botanicals: juniper, clitoria ternatea (butterfly pea), lemon myrtle, valencia orange peel, lemon peel, bois bande, angelica root, elderflower, cinnamon, pepperberry, cardamom and licorice root Ink Bitter Orange Gin started out as an idea to bring the sophistication of the bitter orange fruit into a spirit which was accessible, versatile and nostalgic.

The base gin was distilled with some of Ink Gin’s star players - juniper berry, coriander, angelica and liquorice root. The flavour base continues to build with a tart infusion of sloe berries (actually a fruit) and this tartness is balanced by an explosion of sweet red berries. Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. He had found the hero botanical of Ink Gin. Harriet loves the traditional English sloe gin style of liqueur. After much nagging to Quentin, he obliged and created Ink Sloe & Berry Gin. This natural floral infusion gives a remarkable and lustrous quality, most elegantly displayed in their signature Ink & Tonic, which changes colour from deep blue to blush pink when mixed.

As Australia’s first agricultural rum distillery we are developing this style of rum with a farm to bottle™ philosophy, using sugar cane grown 100% on our farm. The final ingredient is added in a post-distillation infusion. The specially prepared petals of the butterfly pea flower are steeped in the still for twenty-four hours to give Ink Gin its distinctive colour.

Palate: Peppercorn and cardamom give it a spicy opening, with rounded notes of orange balancing it all out. Paul wanted to make a gin.
